Pig Cake



This cake was pretty fun to make. It wasn't for any special occasion, I just wanted to try a pig cake and here it is! 

3 cups cake flour
1 3/4 cup sugar
4 teaspoons baking powder
1 teaspoon salt
2/3 cup room temperature butter
1/3 cup maraschino cherry juice
2/3 cup buttermilk
16 maraschino cherries, very roughly chopped
3 eggs
1/2 cup chopped pecans (Optional)

Sift together flour, baking powder and salt. Blend together sugar and butter. Add cherry juice, and buttermilk. Stir, then add dry ingredients. Beat 2 minutes and then add eggs. Beat a couple of minutes more. Gently stir in cherries and nuts. 

Pour into prepared oven safe glass bowl. Size will depend on how large or small of a pig you want. Bake at 350 degrees F for 30 to 35 minutes, or until done. Cool and frost with your favorite frosting. Decorate with pink fondant. For the mud use chocolate frosting.
