Green Velvet Cupcakes with Clovers



Green Velvet Cake
Ingredients:
2 1/2 cups all purpose flour
2 cups sugar
2 Tablespoon cocoa
1 teaspoon salt
1 teaspoon baking soda
2 eggs
1 1/2 cups oil
1 cup buttermilk
1 Tablespoon vinegar
1 teaspoon vanilla
2 teaspoons green gel food coloring


Cream Cheese Filling 
Ingredients:
1 8 oz. pkg. cream cheese
1/3 cup sugar
1/8 teaspoon salt
1 egg

  • Preheat oven to 350 degrees.
  • Put cupcake liners in muffin tin
  • Beat eggs and butter. Mix in oil, buttermilk, vinegar, and vanilla.
  • Place all the dry ingredients in large mixing bowl.
  • Add wet ingredients to the dry ingredients and mix on medium-high  until completely combined.
  • Mix in color.




Fill muffin cups 2/3 cup full.

Make filling.

Beat salt, cream cheese, sugar, and egg until fluffy. 


Put one heaping tablespoon of cheese mixture in the center of each cupcake. Add another 2/3 cup on top of the cheese mixture.

Bake at 350* for around 15 minutes or until tops start to brown and a toothpick comes out clean.



Then make your favorite frosting and color green. To make the little clovers I used a Wilton 2D tip. Watch video below.

  2. These look super tasty. I love the clover frosting too. I have to admit that I am not good at frosting. Maybe some day. I will definitely give this a try for St. Patrick's day. :) Thank you for sharing.
