Pumpkin Risotto

 



Risotto seems like too much work, and a lot of attention to detail. But, after trying this recipe of Pumpkin Risotto, you might have a change of thought. This recipe is an absolute delight to savor! If you haven’t tried it yet, I have to tell you that you definitely miss out on some decadent flavors from the simplest of the ingredients.

This dish’s flavors are typically based around the quality of broth, butter, and wine you use to cook it. I strongly recommend homemade broth as it is way more flavorful and nutritious than the store-bought kinds. Also, you have the liberty to adjust the salt content according to your preference, in case you are not too fond of the low-sodium variation of broth.

Ingredients

1 cup pumpkin, cubes without seeds

½ tablespoon extra-virgin olive oil

½ cup onion, peeled and chopped

3 cloves garlic, peeled

2 tablespoons butter

1 cup Arborio rice

1 teaspoon cumin powder

2-3 cups chicken or vegetable stock (preferable homemade)

½ cup white wine

Salt, to taste

Black pepper powder, to taste

Spring onion greens, for garnish

Directions

1.      Heat oil and butter in a gas stove friendly cookware.

2.      Add onion to it and sauté the onions until tender, for about 3 to 5 minutes.

3.      Stir in pumpkin cubes and garlic to the pan. Cook the vegetable for another 5 minutes.

4.      Add rice to the pan and cook it while stirring gently for 2 to 3 minutes.

5.      Start pouring the stock to the pan ¼ cup at a time and let the rice absorb it little every time.

6.      Again, when the stock is dried out, add another ¼ cup of stock to the pan, and so on. Repeat it until the rice is almost done (about 80% cooked).

7.      Add cumin powder, salt, black pepper, and stir it lightly.

8.      Pour the wine into the pan and cook it until the rice gets a nice creamy consistency.

9.      Garnish with spring onion greens, serve hot, and enjoy!

Cactus Cake for Cinco De Mayo


I don't have any pictures as I was making this but I will share the recipe I used. It was a red velvet cake inside with butter cream frosting. The green is fondant. This was a very big cake. It was about 24" tall.

I started by making three 9x13" cakes. After they were cooled I started to freehand cut out and piece together what I thought looked like a cactus. I then frosted it and added on another layer. I used a lot of frosting to glue it all together. I then smoothed the frosting out as best as I could. 

The night before I made two batches of fondant and colored it with green gel coloring. I then rolled out my fondant. This was the most difficult part because the cake was so large. I have never had to work with this big of an area with fondant. My son actually had to help put the fondant on this one. After the fondant was on I took a small round ball tool and made the lines in running down the cactus.

Next I took sunburst candies and rolled them out and cut them in the shape of flowers. I use the candies when I need different colors and I only need a small amount. The stickers are toothpicks broken in half and stuck all over. I would like to lie and say that I made the lizard but it is a small plastic one that I purchased.:)

Classic Buttercream icing-yield 6 cups

*2 cups butter or solid white veatable shortening
* 2 teaspoons vanilla (use clear vanilla to get a pure white icing)
*4 tablespoons milk or water
*2 pounds pure cane confecioner suger (thats around 8 cups)
*2 tablespoons meringue powder (this is sold at ac more or michles craft stores, and other specialty baking stores)

Directions- On medium speed, cream shortening, vanilla, and water/milk. Add half of dry ingredients, mix a little, add other half. This will create a stiff icing. If it is too stiff, add another tablespoon or two of water/milk
.

Taco (soup) Tuesday in a Slow Cooker

This week I saw at least three people share their 
Taco Soup recipes. So of course I had to make some and 
share my favorite recipe with you!

Whats amazing about this is, everyone loves it, 
it is so easy to make and of course delicious!

*Note - I doubled the recipe and put it in an extra large crock pot,
  as you will notice in my pictures.

Ingredients

1 lb extra lean ground beef
1 onion, chopped (I use chopped frozen onions)
1 (16 oz) can chili beans, with liquid

My husband is not a real big Facebook person and only follows a couple family members so I knew he had not seen this prank yet. He was way too nice about it, I would have been so ticked!!! 😡
