Lemon Cheescake for Two

 Light and yummy lemon cheesecake for two!



Ingredients
     1/2 package graham crackers
    2 Tbsp. melted butter (more if needed)
    2 oz.  (1/4 of 8-oz. pkg.) Cream Cheese, softened
    2 Tbsp.  sugar
    1 cup  room temperature Cool Whip
    2 tsp lemon 
    1tsp vanilla
      1. Mix 1 tablespoon sugar with melted butter and crushed graham crackers in a 4x4 container
      2. Beat the cream cheese, extracts and 1 T. sugar until smooth. Blend in whipped topping. Spoon mixture into graham crumb crust. Refrigerate for 1 hour.
      3. Garnish with lemons or your favorite topping. Serve.

      5. I LOVE your crochet dish towel! Pattern? I am the only one in this house that likes lemon flavor, so lemon for 2 is a great recipe for me and, well, me!

        I'm such a H.U.G.E. fan of lemon so your cheesecake really caught my eye. Is it bad that I want to put my hand through the screen, grab this cheesecake, run off to the bedroom and eat it all to myself under the covers? Umm, yeah! I think my kiddos would get seriously jealous if I made this recipe just for two though. More reason to double it! :)

        Also, we don't get cool whip here in the UK. I hear it's kinda like a lower fat sub for heavy cream, is that right? I'm guessing I could just sub that out for heavy cream then?
