Home Cooked Black Beans in Cowboy Caviar

I love to make my own black beans, because you can make them so flavorful. This way you can make a big pot and use them for several dishes.



To make the black beans I start with a 16 oz bag of beans. I put them in my crock-pot with water and let them soak overnight with no heat. Pot is turned off.

The next day I rinse them with clean water and put more water in. Just enough to cover the beans. Then I start shaking in the Tabasco sauce. You will probably want to start out with 5 TB I use 10 TB. This is a personal preference.


Next add 3 - 6 garlic cloves. I personally like six.

Next put 2 tsp onion powder, salt and pepper to taste. Stir.
Put the lid on and cook throughout the day on medium - high.


*You now have yummy beans that you can put in a tortilla with some cheese and enjoy.
*You can also puree them for a yummy dip.

If you are making the cowboy caviar, You will need the following ingredients. You don't need to add the exact measurements. Put in more or less of your favorites. Grab a large bowl and start adding the following

Your black beans
2 cups corn
1 bunch chopped cilantro
6-8  chopped roma tomatoes
1/2 red onion minced
2-4 chopped avocados

In a small bowl mix the next  ingredients and pour over vegetable and bean mixture. Stir.
1/2 cup rice or red wine vinegar
1/2 cup olive oil
2 TB sugar
salt and pepper to taste

Chill for an hour or so and serve with some tortilla chips. YUM!
