Green Bean and Rice Casserole

Rice & Green Bean Casserole


Hello, everybody! I’m Kendra and I blog at Kreative Creationz. I love blogging about beauty, cooking, crafting, and my everyday life. Today Marcie has given me the pleasure to share one of my kreative recipes with you.

For the past few months I’ve tried to carefully watch what I eat. I decided to have a Meatless Monday. Not eating meat for one day out of the week really isn’t that bad. It’s also a great way for me to be a little more kreative with my recipes!

Well, the only drawback for me about Meatless Mondays is that I have to think ahead about the meal I’m going to cook. It needs to be something I love and that my husband won’t miss the meat. He never really agreed to Meatless Mondays but hey, I’m the one cooking.

Here is my latest recipe from Meatless Mondays. It’s quick and easy and enough to feed a family for a couple of days. Who wants to spend hours in the kitchen after having a long Monday, anyway? Not me! Enjoy!

Rice & Green Bean Casserole


Ingredients
3 Cups Rice, Uncooked
2 ½ Cups Green Beans, Frozen
3- 10 oz. Cans Cream of Mushroom
1 ½ Cup Mild Cheddar Cheese, Shredded 1/2 Cup Whole Milk
1 Tbsp. Black Pepper
1 Cup French Fried Onions

Directions
Preheat oven to 350°. Cook rice according to package. In a small pot, bring green beans to a boil and immediately move from heat. Strain water from green beans. In a large bowl, mix rice, green beans, cream of mushroom, milk, pepper, and ½ cup of cheese. Evenly place mixture into 9x13- inch casserole dish. Evenly sprinkle French fried onions then cheese over mixture. Bake for 15 minutes or until cheese is completely melted. Serve with salad.
